Breakfast Serves 1
Food units: 1 Meat&Protein, 1 Bread&Cereals, 0.2 Vegetables, 1 Fruit, 1 Dairy, 1 Healthy Fats and Oils
- 2 eggs
- 1 tsp olive oil
- 1 cup baby spinach
- 1/4 cup basil
- 1/2 lemon, zest and juice
- 1 slice Burgen bread, any type
- 1/4 cup parmesan cheese, grated
Place eggs in a pot of water and bring to the boil. Let eggs boil in water for 8-10 minutes.
Remove and place in cold water immediately. Once cooled, remove from water and peel and halve lengthways.
Meanwhile, heat olive oil in a small fry pan over medium heat. Add spinach leaves and cook for 1 minute or until just wilted. Remove pan from the heat and stir through basil leaves and finely grated lemon zest and juice. Season to taste with pepper.
Serve on toasted bread, top with soft-boiled eggs and sprinkle with parmesan.
